As the summers are approaching and the craving to eat something cool and sweet is going up, more people head toward the ice cream parlors, but as ice creams are made using dairy products so eating them for the people living on a vegan diet is out of the question. But the vegan ice cream can also be prepared with soy milk, coconut milk, almond milk, rice milk containing no dairy products. But the same consistency and thickness as the dairy ice cream has, is difficult to get with soy, almond and rice milk. Coconut milk is the best for preparing ice cream with a hint of coconut and great texture, but so many flavors can be paired with it. As some vegan people avoid sugar, so raw sugar, honey or corn syrup or agave nectar can be used to sweeten the ice cream.  Here is a recipe of vegan ice cream to make and sharing it with the family and friends and having a lot of appreciation.

Coconut Ice Cream with Almond Chocolate Chips

What You Will Need?

1 can full-fat coconut milk
1/4 Teaspoon kosher salt
2 Teaspoon cornstarch

1/2 cup honey or agave nectar to sweeten the ice cream

1 1/2 Teaspoon vanilla essence or extract

Dark or white chocolate chips

Coarsely chopped raw almonds

Method:

First put the ice cream bowl into the freezer overnight. Take coconut milk can and shake it well because the coconut milk has a tendency to form two layers, one full fat coconut milk and second the watery layer. Pour 1 cup of coconut milk into a bowl and set it aside and then mix the remaining coconut milk, honey and kosher salt into a saucepan. Put it on to a medium heat for 2 to 3 minutes mixing all the ingredients.

Add the cornstarch into the remaining 1 cup of coconut milk, stir it properly and mix it with the base onto the heat and stir it for 8 to 10 minutes until the mixture thicken. Don’t let the mixture boil, and then add the vanilla extract while stirring it.

Remove the mixture from the heat and make it cool and pour it in a bowl and cover it and let it cool for 5 hours in the refrigerator. Then toss the base in the ice cream maker, adding chopped almonds and chocolate chips. When it starts thickened, put it again in freezer for few hours till the ice cream got the icy cool texture.

How to Do It without Ice Cream Maker:

If you don’t an ice maker then after taking down the hot base from the heat make it cool and refrigerate it for 30 minutes, take it out and beat it vigorously put back in to the freezer for another 30 minutes. Repeat this process until the ice cream is creamy and fully frozen.

You can even experiment with your own favourite flavor and real fruits and nuts to make your own masterpiece with the help of the above recipe.

A vegan ice cream is an incredibly healthy option as compared to those made by the traditional dairy mixed with a lot of sugar and other preservatives. There are now several ice cream manufacturers that offer it using all natural and organic ingredients such as creamy coconut milk and agave nectar.
