Ingredients and simple directions:




  • ¾ to 1 cup sugar
  • 2 tablespoons arrowroot
  • ¼ teaspoon salt
  • 2 cups heavy cream
  • 2 cups half-and-half
  • 4 large egg yolks
  • 1 tablespoon pure vanilla extract


  1. In a medium, heavy saucepan, whisk together sugar, arrowroot, and salt. Whisk in heavy cream and half-and-half. Place saucepan over medium low heat and bring to a simmer, whisking constantly. Remove from heat.
  2. In a medium bowl, whisk egg yolks until very smooth. Whisk ½ cup of the hot cream mixture into eggs, and then slowly pour egg mixture into saucepan in a slow steady stream, continuing to whisk constantly until well-blended.
  3. Return saucepan to medium-low heat and cook, stirring constantly, until mixtures registers 175°F and coats the back of a spoon. Remove from heat, stir in vanilla extract, and pour custard into a medium bowl. Let stand at room temperature 15 minutes, stirring occasionally. Cover and refrigerate overnight or until temperature reaches 40ºF.
  4. Freeze in ice cream maker, according to manufacturer’s directions. Serve immediately or transfer to freezer-safe container and freeze, tightly covered, up to 1 week.



Fresh Strawberry Ice Cream: Stir 1 cup fresh, hulled, sliced strawberries and 2 drops of red food coloring into chilled custard before churning.

Chocolate Chip Ice Cream:  Stir 1 cup semi-sweet chocolate chips, such as Tropical Source or Ghirardelli, into chilled custard before churning.
